Experimenting



So I’ve never been very into baking.  In fact, I kind of hate it.  It doesn’t allow for much wiggle room or random decision making – which is what I love so much about cooking.  However, for some unknown reason, I’ve been super into it lately.  Above is my latest creation – Pumpkin Cupcakes with Cream Cheese Frosting.  They were a huge hit with the birthday boy.
They were fairly simple – I used Trader Joe’s “Pumpkin Bread and Muffin Mix” so they weren’t completely homemade.  I’m seriously considering investing in a mixer, though, because my hand is screaming today.
I have quite a bit of leftover frosting so we’ll see what I decide to do with it tonight.
